My Choice

If I were to choose between these two phones, I would choose the Apple iPhone 15 Pro Max.

While the vivo V21 5G is a decent budget-friendly phone, it's not competitive in terms of overall performance, display quality, and camera capabilities compared to the iPhone 15 Pro Max. As a tech enthusiast, I value having the best possible hardware performance, a top-of-the-line display, and the highest quality camera for photography and videography. The iPhone also has the added benefit of long term support and updates as well as wireless charging. The superior experience offered by the iPhone 15 Pro Max makes its premium price justifiable for my needs. I am also heavily invested in the Apple Ecosystem and prefer iOS and it's simplicity. I am willing to sacrifice a lighter device and front flash for the advantages the iPhone offers. The only advantage the vivo has that I might miss is the faster wired charging speeds.
